Mauro Colagreco has forged a style of his own, born of his Argentinian heritage, the chefs with whom he trained, and his strong intuition as he draws on the local culture on both sides of the French-Italian border.

His restaurant in France, Mirazur, was awarded Three Michelin Stars and ranked 1st in San Pellegrino’s 2019 “The World’s 50 Best Restaurants”. Mauro Colagreco was also voted “The Best Chef in the World” by Le Chef Compilation 2019.

Chef Davide Garavaglia graduated from Milan’s leading culinary school in 2009 and continued developing his interest and passion for cooking under Chef Davide Oldani at D’O, a Michelin-Starred restaurant in the city. In 2013, he moved to London to gain a wider experience at Sketch under Chef Pierre Gagnaire. Chef Davide then joined Mauro Colagreco’s Mirazur in 2015 where he was instrumental in the restaurant’s recent 3 Michelin star achievement as well as the climb to rank 1st in The World’s 50 Best Restaurants.

He has brought the cooking philosophy of Chef Mauro Colagreco from the Mediterranean to the Chao Phraya since its opening in 2020. Chef Davide has also achieved the MICHELIN Thailand Young Chef Award in 2023.

Fruit of the Bordeaux terroir, Thibaud’s professional journey began in the vineyards of Western Australia and later brought him to Gaggan in Bangkok where he served as General Manager and Sommelier for three years, leading the team to climb the “Worlds’ 50 Best Restaurants” ranking from 10th place to 7th and ultimately the top position. A return to his hometown included a stint at La Grande Maison by Pierre Gagnaire, a 2 Michelin star restaurant in Bordeaux, before returning to Thailand.

Growing up in the small town of Corato in Puglia, one of the most renowned wine-making regions of Italy, the son of a wine and olive oil producing family, Sabino developed an interest in full-bodied red, dry rosé and rich white wines at a young age. But it was when he moved to London to join the sommelier team of the prestigious The Cavalry & Guards Club that his passion for wine developed into expertise. He became Assistant Head Sommelier and had the opportunity to serve Queen Elizabeth II twice.

Recently, he received the prestigious award for Best Italian Sommelier from “Award Ceremony Ospitalita Italiana 2023”, the prestigious certification dedicated to celebrating Italian cuisine by the Thai-Italian Chamber of Commerce. At Côte, Sabino will gladly share his vast knowledge of wines from all over the world to diners who share the same passion.
